Thanks to the hot winds blowing into the mountains from the Tehuantepec plain in Mexico, this is one of the only regions in Guatemala where coffee can be grown at altitudes reaching up to 2,000 meters without the risk of frost. This unique weather pattern creates "Strictly Hard Beans" (SHB)—high-density coffee that is packed with concentrated sugars and complex acids.
